Ingredients.

For 2 persons

  • Fish (clean portion fillets) – 2.
  • Big lemon – 1.
  • Shallots or small onion, finely chopped- 1.
  • Fish or vegetable broth or white wine 50ml.
  • Capers 1-2 tablespoons drained.
  • Skim fresh whipped cheese or light cream or butter (1 heaping tablespoon) 20ml.
  • Mustard (2 teaspoons) 10ml.
  • Chopped fresh parsley.
  • Extra virgin olive oil.
  • Black pepper.
  • Salt.

How to make grilled fish with lemon and caper sauce?

Difficulty: Easy

  • Total time 25min.
  • Elaboration 5min.
  • Cooking 20min.

Dry the clean fish well with kitchen paper, season with salt and pepper and grill with a little oil, over medium-high heat, allowing it to brown well on both sides until it is cooked through on the inside . Remove to serving plates. If we had the oven hot (off), take advantage of the residual heat to keep it warm. Add a little more oil to the same pan and cook the chopped shallot with a pinch of salt, letting it fry for a couple of minutes . If using chives it may need a few more minutes. Add the strained lemon juice, a little of the fine zest and the broth or wine. Cook over low heat for about 5 minutes.

Add the dairy (or use a vegetable equivalent or virgin coconut oil), the mustard and the capers, stir well and cook until reduced for a few more minutes. Add fresh chopped parsley and spread over the fish. Serve immediately.
