Today’s recipe will delight pasta lovers , those who love broccoli and those who are not so fond of this versatile and healthy vegetable. Although the version of fake broccoli pesto is relatively popular online, this proposal is something different, as we present a different sauce with a much milder flavor , which is also prepared in the same pot.

We know that not everyone has a robot, large chopper or food processor, and nor does everyone usually feel like shredding or mashing vegetables by hand. That is why this recipe is ideal so that everyone can prepare it without problems, using the same pot – plus the one we use separately to cook the pasta, of course. The sauce is also great to combine with other dishes , for example, to season roast potatoes or sweet potatoes, season fish or meat.

Spaghetti With Broccoli Sauce: Healthy Vegetarian Recipe to Enjoy Pasta in One Pot.

Ingredients.

For 4 people

  • Broccoli- 2
  • Garlic cloves- 3
  • Vegetable or chicken broth or water (approximately)- 150ml
  • Spaghetti or other long pasta- 320g
  • Parmesan cheese to taste
  • Extra virgin olive oil
  • Black pepper
  • Salt
  • Oregano to taste (optional)

How to make spaghetti with broccoli sauce?

Difficulty: Easy

  • Total time- 50m.
  • Elaboration- 10m.
  • Cooking- 40m.

Cut the broccoli florets and part of the thinner stems, save fat logs for another use. Wash, drain and cook in a saucepan with a couple of fingers of boiling water, adding a whole clove of garlic to give more flavor. Sprinkle with a little baking soda optional, it helps preserve the color, cover and let it boil for a few minutes until slightly tender.

Drain the broccoli and discard the garlic clove or keep it if you prefer a more intense flavor. In the same saucepan, add a little olive oil and heat over medium-low heat. Brown the other chopped or sliced ​​garlic without letting it toast. Return the drained broccoli and sauté, raising the heat so that it browns a little.

Season with salt and pepper and cook, stirring the vegetables until they become increasingly tender, mashing them with a spatula or ladle. Add the broth and let it finish dissolving over medium heat , covering the pot and stirring occasionally. Meanwhile, heat the water to cook the spaghetti, with salt.

Continue mashing the broccoli until it has the consistency of sauce and season with cheese to taste. Cook the pasta two minutes before the package indicates. Pour in the semi-cooked pasta, also adding part of the cooking water, little by little, stirring well, to integrate the pasta with the sauce and achieve the desired consistency.

After stirring everything for two or three minutes, the pasta will be done. Serve with more pepper and cheese to taste.
