  • 300 g chicken breast fillets.
  • 1 teaspoon harissa, chili or hot pepper sauce.
  • 1 tablespoon tomato paste.
  • 1 tablespoon lemon juice.
  • 1 tablespoon sherry or rice vinegar.
  • 1 tablespoon oil of extra virgin olive (and more for cooking).
  • 1/2 teaspoon of ground cumin.
  • 2 tablespoons of raw peeled almonds (in sticks or sliced).
  • 1 clove of garlic.
  • 1 medium bell pepper.
  • 100-150 g of basmati rice or thai, thyme, black pepper and salt.

How to make stir-fry chicken, pepper and rice with almonds?

Dry the chicken with kitchen paper, remove any traces of fat and cut into strips. Mix the harissa, tomato, lemon, vinegar, oil and cumin and add to the chicken. Season and mix well. Let it marinate for a few minutes and cook the rice according to package instructions.

Cut the washed pepper into strips, removing the seeds, and slice the garlic clove very finely. Toast the almonds in a frying pan without oil and add the garlic with a little oil when they start to take color. Add the chicken with its marinade and sauté over high heat until the meat is no longer raw.

Add the peppers, season with salt and pepper and mix well. Sauté the whole thing for a few minutes, just enough for the chicken to be cooked and the vegetables to remain slightly crispy. Add the rice, cook everything for a couple of minutes, stirring well, and serve with a touch of pepper and thyme.

The ideal thing about stir-fries like this one with chicken, pepper and rice with almonds is to serve them immediately, but if we let it cool a little at room temperature it is still very good. I like to water it with a good splash of lime juice to give it a touch of acidity and freshness, especially now with this heat.
