Ingredients for 2 people.

  • About 200-50 g chicken breasts or breast tenderloins.
  • 300 g pumpkin.
  • clove of garlic.
  • 1 tablespoon sweet smoked paprika.
  • 1/2 teaspoon hot paprika (or to taste).
  • 1/2 teaspoon garlic granulated.
  • 1/2 teaspoon of ground cumin.
  • 1/2 glass of white wine, black pepper, salt, extra virgin olive oil and fresh parsley to serve.

How to make paprika chicken stir fry with pumpkin?

Let the chicken meat cool a little, dry with kitchen paper and cut off any traces of fat. Cut into bite-size pieces and place in a bowl. Add a little olive oil, sweet and spicy paprika, granulated garlic, cumin and a pinch of pepper . Mix well and let it rest.

Meanwhile, peel the pumpkin, remove the seeds if any, and cut into bite-sized cubes. Steam, microwave or roast with a pinch of salt and pepper until tender inside but still firm.

Heat a little olive oil in a frying pan and add the sliced ​​garlic clove . Let it brown until the aroma is released and remove, or add the chicken directly. Cook, sautéing it over high heat until it begins to take color. Add the pumpkin, stir well and pour in the wine.

Cook the whole until everything is cooked to taste. Season with salt and pepper and serve with fresh chopped parsley, adding if we want some extra, sweet or spicy paprika.
